Can Air Fryers Be Toxic? Or Release Chemicals?
1. Air Fryers Harmful Coatings: Teflon, PFOA, BPA
- Air fryers often feature non-stick coatings made from Teflon, which contain PFAS (Per- and Polyfluoroalkyl Substances), including chemicals like PFOS and PFOA. PFAS have historically been used in Teflon for their non-stick properties. PFAS are slow to break down and accumulate in humans, animals, and the environment over time. That’s why they are called “forever chemicals.”
- The International Agency for Research on Cancer (IARC) has classified PFOA as a Group 1 carcinogen, indicating a clear link to human cancers such as testicular and kidney cancer. In California, PFOA is listed under Proposition 65 for its potential to cause birth defects, reproductive harm, and increased cancer risk. Exposure to PFOA during pregnancy is particularly concerning due to its potential impact on child development. The European Chemicals Agency (ECHA) listed PFOA as a substance of very high concern in 2013, leading to a ban on its manufacture and marketing in the European Union from July 2020.
PFOA contained in Teflon are proven to be toxic. But at what temperature is there a risk?
- An empty overheated Teflon-coated cookware does pose a risk by releasing toxic fumes. But it’s still unclear at what temperature, heated teflon-coated cookware releases toxic fumes. The Environmental Working Group says that teflon-coated pan releases the fumes at 325 degrees, other studies say at 660s degrees.
- Another concern was raised recently. This 2022 study from Australian researchers found that a single surface crack on a Teflon-coated pan could release about 9,100 plastic particles during the cooking process. Should something break the coating, around 2,300,000 microplastics and nanoplastics may be released and potentially find their way into food.
For all these reasons, it’s safer to just phase out Teflon, PFOA, PFTE, or GenX coatings in air fryers, pans, pot or other highly heated cookware.
- You should also avoid any air fryer with plastic baskets that contain BPA, another harmful chemical.
2. Acrylamide in Air Fryers
Acrylamide formation is a concern when cooking with an air fryer, particularly when frying, baking, or roasting foods like potatoes at high temperatures. Acrylamide, listed on Proposition 65 for its links to cancer and potential reproductive harm, forms under certain cooking conditions.
However, the levels of acrylamide typically found in food are lower than those causing these harmful effects.
To minimize acrylamide production in air fryers, it’s recommended to fry at temperatures no higher than 170°C (338°F). Additionally, soaking raw potato slices in water for 15-30 minutes before cooking can help remove acrylamide precursors. Also, avoiding the storage of raw potatoes in the fridge is advised, as cold temperatures can increase their sugar content, potentially leading to higher acrylamide levels when cooked.
What Materials Are Safe For Air Fryers ?

- There was a trend to switch from Teflon to ceramic coatings, supposedly safer. However, there’s some ambiguity about what ceramic coatings actually contain. Manufacturers claim they’re mainly silica and alcohol-based binders, but they’re not obliged to reveal their exact compositions. So, we’re a bit in the dark about any potential health risks.
